WINEMAKERS NOTES

Parcels of fruit were harvested at different times when considered flavour ripe, and the wines were fermented under cool conditions to preserve the aromatics before careful blending took place to create a balance between the low alcohol, natural fruit sweetness and the lifted aromatics. The wine was bottled soon after the fermentation was complete to trap all of the aromatics inside.
