Pata Negra House致力尋找最獨特的伊比利亞火腿,沿途被引導在Dehesa de los Monteros遇見Jose Simon。Jose他們一家在Ronda 附近的Andalusia 牧草地獨立養殖伊比利亞豬。

12年前,他們一家決定在橡果餵養期前(Montanera) ,以當地生產的栗子餵飼豬隻,從而製作不一樣的火腿。

栗子及橡果的獨特結合,帶來有史以來最甜美的伊比利亞黑毛豬風乾火腿。憑著栗子的獨特質感,產量有限 (每年只出產1400件火腿)及對高品質的追求,使Pata Negra House的栗子餵飼伊比利亞火腿推向巔峰。

 

西班牙黑毛豬火腿片48個月(雙重橡果子餵飼)

限量版伊比利亞火腿

當大多數伊比利亞豬每年只會進食一個季度的橡果,Pata Negra House精選小量的豬隻進食兩個季度的橡果,因而製作獨特的雙重橡果餵飼的伊比利亞火腿。

當第一次的橡果餵養期(Montanera) 未有直接影響火腿的味道,他們促進幼年的豬隻會更有食慾進食多一季度的橡果,加強吸收油酸含量。

隨後的第二次餵飼令豬隻體內的油酸含量遠高於其他伊比利亞豬隻,更能融入在它們的新陳代謝中。高含量的不飽和脂肪酸(>55%) 及豐富的大理石花紋讓火腿果香濃郁,味道持久,爆發橡果芳香。

Presentation of the estate

The Château Ragon Bel-Air is owned by the same family since 1957. It is managed today by Jean Luc

Sorges and the oenologist Thomas Duclos. The estate is located in Landerrouat, a small town situated

in the south of the Entre Deux Mers region. Nowadays the vineyard covers about 320 hectares and is

planted with traditional grape varieties, Merlot and Cabernet.

Tasting comments

Château Ragon Bel-Air 2020 seduces us with its deep and brilliant ruby colour. After aeration it offers

a delicate, complex and powerful nose with a combination of ripe red fruits, spices and floral notes. On

the palate, that very pleasant wine is full and harmonious with round and silky tannins. It has a long and

well balanced finish.
 

Food & Wine Pairing : Nice to have with some grilled red meat or cheeses.

Serving condition : Between 16°C and 18°C

Preservation : Up to 5 years reflecting the above notes. After this period, the wine will show more mature

characteristics.
