In the Loire, Cabernet Franc is evocative of a walk in the woods. At Bellevue, the wine lives its expat life to the fullest, layering forest foliage and fresh herbs with Cape fynbos. A limited release made from grapes long sought after by other award-winning Cab Franc producers.
TASTING NOTE
Enchanting aromas of wild bramble fruit, tea leaf and thyme on the nose, leading to velvet-soft palate of dark plums, berries and cherries. Seamless balance between pure fruit, fresh acidity, polished tannins and restrained oak for classic fine dining.
IN THE VINEYARD
From a trellised, dryland, single vineyard.
IN THE CELLAR
After four days of cold soaking, the juice was inoculated, and fermentation took place with aerated pump-overs three times daily. Once fermentation was complete, the skins were pressed, and the wine was settled and racked off the fermentation lees. Malolactic fermentation took place in 100% new French oak barrels, where the wine was then left to mature for 22 months.
